BAKED WALLEYE
(4) 8-ounce walleye fillets
3 tablespoons butter – melted
2 tablespoons green onion – diced
1/2 teaspoon dill
2 tablespoons lemon juice
3 tablespoons butter
1/2 teaspoon salt
4 tablespoons flour
1/4 teaspoon pepper
1/3 cup milk
Preheat oven to 450 degrees. Spray a 9/13 baking dish with nonstick cooking oil. Place the fillets in the dish in a single layer. Combine the melted butter, lemon juice, green onion, dill, half the salt and pour over the fillets. Cover the dish with foil and bake for approximately 25 minutes. Drain the liquid into a bowl. Re-cover the fish with the foil and keep warm. Add enough water to the liquid to make approximately 1 1/2 cup. Melt the butter in a pan. Stir in the flour, remaining salt and pepper. Combine with the liquid mixture. Add the milk. Cook while stirring constantly until the mixture thickens. Pour over the fillets and serve immediately.
